Beltaine Blog

Hello Everyone,

It is I Annie Zimbel.   Welcome to Beltaine.  This is the time the wheel turns and folks tend to get BUSY…planting and celebrating the end of Spring and the very start of Summer.  There be Morris Dancing at the crack of Dawn at the river (6:03 a.m.) you should check it out,  There will be the annual Heart of the Beast, Powderhorn Park May Day Celebration which is always fantastic. Celebrations also include May Poles and dancing. May Day reminds us of the time of union.  Both physically and politically.  We couple and engage with body, mind and spirit in the sharing of goals and uniting. There is more daylight so folks are more out and about. Possibilities are starting to take seed as more plans and ideas start to flourish just as the flowers and colors become a riot.  May 1st also is the International day of Laughter. Go out and laugh.

I think this time of year is special especially for hunting mushrooms. Here is the recipe I chose for this special day.

Mushroom Crepes

From the Mushroom Growing and Cooking Book.

Ingredient:

2 eggs, well beaten

1 cup milk

1 cup flour

salt

Stir ingredients, cover and let stand at least 1/2 hour.  The batter should be thin.  Heat frying pan with salad oil and pour in enough batter to cover pan in thin layer.  Tilt pan to spread batter evenly.  Cook on one side. turn with spatula and brown the other side.

Basic Creamed Mushrooms Recipe

(Ingredients:

mushrooms

butter

flour to thicken

broth

cream

Cook mushrooms in butter. Add flour to thicken.  Then add equal parts of broth and cream. Cook, stirring constantly until thickened (it should be like a thin paste)).

or 

Ingredient:

3/4 lb. mushrooms

2 egg yolks, beaten

3/4 cup sour cream

3/4 pound mushrooms sautéed for 5 minutes 2 egg yolks beaten with 3/4 cup sour cream

Cook the ingredients together about 2 minutes.  Put a spoonful on each pancake and roll up.  Put in a baking dish and reheat in 350° oven.

This Beltaine article marks my last official blog as WiCom’s 2015/16 May Queen.  Never fear, like Miss Richfield 1981, I will stay May Queen 2015/16 and continue writing bits.  They may be different but what the hey. I do want to thank everyone for all the experiences I have been through this year.  Being May Queen I found some things were lovely some not so much.  I know also that being May Queen I found it had put me in uncomfortable positions that showed me that I can stand in my own shoes and grow.  Still it was quite interesting.  I have discovered a part of me that when I am silent I speak louder than if I speak out loud.  I found that I can make some great decisions, have wonderful ideas and that, even if not acted out quite the way I desired still the intent and information do soar through and was well received.  I enjoyed writing these articles and helping those in need when they called.  We have an interesting and diverse community that I am definitely in the middle of and I will always be here if anyone is in need regardless of title.  I thank you all for accepting me as this last years May Queen and I thank the Deities for choosing me to do their will and giving me more strength as well as opportunities to grow.
